Homemade Pumpkin Soup

A creamy and flavorful pumpkin soup that embodies the essence of fall, perfect for cozy nights or gatherings.

Ingredients

  • 4 cups of peeled and diced pumpkin (fresh or canned)
  • 1 medium onion, chopped
  • 2 cloves of garlic, minced
  • 4 cups of vegetable broth
  • 1 cup of coconut milk (or heavy cream for richer texture)
  • 2 tablespoons of olive oil
  • 1 teaspoon of ground ginger
  • 1 teaspoon of cinnamon
  • Salt and pepper to taste

Instructions

  1. Sauté the onions in olive oil over medium heat for 5 minutes until translucent. Add garlic and sauté for another minute.
  2. Stir in the diced pumpkin, ginger, and cinnamon. Cook for 2-3 minutes.
  3. Pour in the vegetable broth, bring to a boil, then reduce heat and simmer for 20 minutes until pumpkin is tender.
  4. Blend the soup using an immersion blender until smooth, or blend in batches if using a traditional blender.
  5. Return the blended soup to the pot over low heat. Stir in coconut milk and season with salt and pepper. Warm for an additional 5 minutes.
  6. Ladle the soup into bowls and garnish as desired before serving.

Notes

For best flavor, choose sugar pumpkins. Adjust seasoning after blending for enhanced sweetness.
