Garlic Butter Shrimp Pasta

A delightful dish that combines the savory flavors of garlic and butter with tender shrimp and perfectly cooked pasta. Quick and easy, ideal for weeknight dinners or special occasions.

Ingredients

  • 8 ounces spaghetti or linguine
  • 1 pound large shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • 1/2 cup unsalted butter (1 stick)
  • 2 tablespoons olive oil
  • 2 tablespoons freshly squeezed lemon juice
  • 1/4 cup chopped parsley
  • Salt and pepper, to taste

Instructions

  1. Cook the pasta in a large pot of salted boiling water according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.
  2. Heat olive oil and 2 tablespoons of butter in a large skillet over medium-high heat. Add minced garlic and sauté for about 30 seconds until fragrant.
  3. Season shrimp with salt and pepper. Add to the skillet and cook for 2-3 minutes on each side until they turn pink and opaque. Remove shrimp from the skillet and set aside.
  4. Melt the remaining butter in the same skillet. Stir in lemon juice and reserved pasta water, bringing the mixture to a simmer.
  5. Add the cooked pasta and shrimp back into the skillet. Toss everything together to coat in the sauce.
  6. Remove from heat, stir in parsley, and adjust seasoning if needed. Serve warm.

Notes

Keep an eye on the shrimp to ensure they don’t overcook and become rubbery. Reserve pasta water for better sauce binding.
