1 ¾ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon baking powder
½ teaspoon salt
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
½ teaspoon ground cloves
1 cup sugar (or brown sugar)
½ cup vegetable oil
3 large eggs
1 cup pure pumpkin puree
1 teaspoon vanilla extract
Instructions
Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
Mix the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves in a large bowl until well combined.
Combine the sugar and vegetable oil in a separate bowl until fully combined. Add in the eggs one at a time, mixing well after each addition. Stir in the pumpkin puree and vanilla extract.
Combine the dry ingredients with the wet mixture, stirring until just combined. Be careful not to overmix.
Pour the batter into the prepared loaf pan and smooth the top with a spatula. Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Slice and enjoy!
