Ingredients

  • 1 lb (450 g) boneless chicken thighs or breasts, cut into bite-sized pieces
  • 1 cup plain yogurt
  • 2 tablespoons lemon juice
  • 2 tablespoons vegetable oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 2 teaspoons garam masala
  • 2 teaspoons ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon turmeric
  • 1 teaspoon cayenne pepper
  • Salt, to taste
  • 2 tablespoons vegetable oil or ghee
  • 1 medium onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 can (15 oz) crushed tomatoes
  • 1 teaspoon garam masala
  • 1 teaspoon sugar
  • 1 can (14 oz) coconut milk or heavy cream
  • Fresh cilantro for garnish

Instructions

  1. Marinate the Chicken: In a large bowl, combine the yogurt, lemon juice, oil, garlic, ginger, garam masala, cumin, coriander, turmeric, cayenne, and salt. Mix well. Add the chicken pieces and ensure they are thoroughly coated. Cover and refrigerate for at least 1 hour, ideally overnight.
  2. Cook the Chicken: Heat a large skillet over medium-high heat. Add a bit of oil if using a non-stick pan. Remove the chicken from the marinade, shaking off excess. Cook the chicken in batches for about 5-7 minutes, or until browned and cooked through. Remove the chicken from the pan and set aside.
  3. Prepare the Sauce: In the same skillet, add another tablespoon of oil if needed. Sauté the chopped onion until translucent, about 5 minutes. Add the minced garlic and ginger and cook for another minute until fragrant.
  4. Combine Sauce Ingredients: Add the crushed tomatoes, garam masala, and sugar to the skillet. Stir and let it simmer for about 5 minutes. Lower the heat and pour in the coconut milk or heavy cream, stirring to incorporate. Simmer for another 5 minutes.
  5. Finish the Dish: Add the cooked chicken back into the sauce. Stir well to coat the chicken in the rich sauce and simmer for an additional 5-10 minutes.
  6. Serve: Garnish with chopped cilantro before serving. Enjoy your Chicken Tikka Masala with basmati rice or naan bread.

Notes

Marinating the chicken overnight enhances flavor and tenderness. Adjust spice levels to suit your taste.
