A warm and hearty beef stew that combines tender chunks of beef with vegetables in a rich, savory broth, perfect for cozy dinners.

Ingredients

  • 2 lbs beef stew meat, cut into chunks
  • 4 medium potatoes, diced
  • 3 carrots, sliced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Sear the beef: Heat the olive oil in a large pot over medium heat. Once hot, add the beef stew meat and sear until browned on all sides, about 5-7 minutes.
  2. Set the beef aside: Remove the meat from the pot and set it aside.
  3. Sauté onions and garlic: Add the chopped onion and minced garlic, sautéing until the onion is soft and translucent, about 3-4 minutes.
  4. Add seasonings: Stir in the tomato paste, thyme, rosemary, salt, and pepper.
  5. Return the meat: Mix the seared beef back into the pot.
  6. Add liquids and vegetables: Pour in the beef broth, then add the potatoes and carrots.
  7. Bring to a boil: Increase the heat to bring everything to a boil.
  8. Simmer: Reduce the heat to low and simmer for about 90 minutes, or until the beef is tender.
  9. Serve: Enjoy the stew warm with bread or rice.

Notes

For a richer flavor, consider using beef chuck or brisket. Leftover beef stew can be stored in the refrigerator for up to 4 days or frozen for up to 3 months.
