A delightful recipe to bring the flavors of the Middle East into your kitchen with easy preparation and a blend of wonderful spices.

Ingredients

  • 1 lb chicken thighs
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground paprika
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cinnamon
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Pita bread or wraps
  • Fresh vegetables (e.g., lettuce, tomatoes, cucumbers)
  • Tahini sauce or garlic sauce for drizzling

Instructions

  1. Prepare the Marinade: In a bowl, mix together the minced garlic, cumin, paprika, turmeric, coriander, cinnamon, salt, pepper, and olive oil.
  2. Marinate the Chicken: Add the chicken thighs to the bowl and ensure they are well coated. Marinate for at least 1 hour; overnight is ideal.
  3. Heat the Grill or Skillet: Preheat your grill or skillet over medium-high heat.
  4. Cook the Chicken: Place the marinated chicken on the grill or skillet and cook for about 5-7 minutes on each side or until fully cooked.
  5. Slice and Serve: Remove the chicken from heat, let it rest, then slice thinly and serve in pita or wraps with vegetables and sauce.

Notes

The longer you marinate, the more flavorful the chicken. Avoid overcrowding in the skillet for even cooking.
