A delightful twist on traditional chili featuring tender chicken, creamy white beans, and a hint of spice, making it perfect for meal prep or gatherings.

Ingredients

  • 1 lb tender chicken breast
  • 1 can white beans, drained and rinsed
  • 2 cups chicken broth
  • 1 can diced green chilies
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Sour cream (optional)
  • Cilantro (optional)
  • Cheese (optional)

Instructions

  1. Heat the oil: In a large pot, heat 2 tablespoons of olive oil over medium heat.
  2. Sauté the aromatics: Add the chopped onion and minced garlic. Sauté for about 3-5 minutes, or until the onions are translucent.
  3. Cook the chicken: Add the chicken breast to the pot. Stir and cook until the chicken is no longer pink, about 5-7 minutes.
  4. Combine ingredients: Stir in the diced green chilies, drained white beans, chicken broth, cumin, chili powder, salt, and pepper. Mix well.
  5. Bring to a simmer: Increase the heat to bring the mixture to a boil. Once boiling, reduce the heat and let it simmer for 20-25 minutes, until the chicken is cooked through.
  6. Shred the chicken: Remove the chicken breast from the pot, shred it using two forks, and then return the shredded chicken to the pot. Stir to combine.
  7. Serve hot: Ladle the chili into bowls and serve hot with your choice of optional toppings.
