Savory baked chicken thighs seasoned with fresh rosemary and thyme, paired with tender roasted potatoes.

Ingredients

  • 4 chicken thighs
  • 2 tablespoons fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 2 tablespoons olive oil
  • 4 medium potatoes, chopped into chunks
  • Salt and pepper to taste
  • 2 cloves garlic, minced (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Mix the olive oil, rosemary, thyme, garlic (if using), salt, and pepper in a bowl.
  3. Coat the chicken thighs thoroughly with the herb mixture.
  4. Arrange the coated chicken on a baking sheet with the chopped potatoes.
  5. Roast for 35-40 minutes until chicken reaches 165°F (74°C) and potatoes are tender.
  6. Serve hot and enjoy with the roasted potatoes.

Notes

For crispy skin, broil for a few minutes at the end of cooking. Adjust cooking time based on thigh size.
