Hearty baked potatoes filled with shredded chicken, tangy barbecue sauce, and melted cheese, perfect for busy weeknights or game day gatherings.

Ingredients

  • 4 large russet potatoes (or sweet potatoes for a healthier option)
  • 2 cups shredded cooked chicken (rotisserie chicken works great)
  • 1 cup BBQ sauce (your favorite brand or homemade)
  • 1 cup shredded cheddar cheese (substitute with mozzarella for a different flavor)
  • 1/2 cup sour cream (Greek yogurt as a healthier alternative)
  • 1/4 cup chopped green onions (to add a fresh kick)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash the russet potatoes thoroughly under running water and poke several holes in each potato.
  3. Place the prepared potatoes directly on the oven rack or on a baking sheet and bake for about 60 minutes.
  4. Combine the shredded chicken and BBQ sauce in a bowl, mixing until the chicken is well-coated.
  5. Slice each potato lengthwise, fluffing the insides with a fork.
  6. Spoon the BBQ chicken mixture generously into each potato.
  7. Sprinkle shredded cheese over the stuffed potatoes and return them to the oven for 10–15 minutes.
  8. Top with sour cream and chopped green onions, serve hot, and enjoy!
