Ingredients

  • 1 rotisserie chicken, shredded
  • 1 can of biscuits
  • 4 cups chicken broth
  • 1 cup milk
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • Salt and pepper to taste

Instructions

  1. Prepare the broth: In a large pot, heat the chicken broth over medium heat. Add the chopped onion, sliced carrots, and chopped celery. Cook until the vegetables are tender, about 5-7 minutes.
  2. Add chicken and milk: Stir in the shredded chicken and add the cup of milk. Season with salt and pepper to taste. Allow the mixture to simmer gently.
  3. Prepare the biscuits: Open the can of biscuits and cut each biscuit into quarters.
  4. Add dumplings to the pot: Drop the biscuit pieces into the pot, making sure they are submerged in the broth.
  5. Cook the dumplings: Reduce the heat to low, cover the pot, and let it cook for about 10-15 minutes until the dumplings are puffy.
