1 lb chicken breasts
1/2 cup low-sodium soy sauce
1/4 cup honey or maple syrup
1 tablespoon rice vinegar
2 cloves garlic, minced
1 tablespoon fresh ginger, grated
1 tablespoon cornstarch
1 tablespoon water
Sesame seeds (for garnish)
Green onions, sliced (for garnish)
Instructions
Place the chicken breasts in the crock pot.
In a mixing bowl, combine the soy sauce, honey (or maple syrup), rice vinegar, minced garlic, and grated ginger. Stir until well mixed.
Pour the sauce mixture over the chicken in the slow cooker, ensuring that it’s well coated.
Cover and cook on low for 6-8 hours or on high for 3-4 hours. The chicken should be tender and easy to shred.
Remove the chicken from the slow cooker and shred it with two forks.
In a small bowl, mix the cornstarch and water until smooth. Add this mixture to the sauce in the crock pot and cook on high until the sauce thickens, about 10 minutes.
Return the shredded chicken to the pot, stirring to coat the chicken in the thickened sauce.
