Broccoli, Cauliflower, and Cheese Soup

A creamy, comforting soup that combines broccoli, cauliflower, and sharp cheddar cheese for a delightful way to enjoy your greens.

Ingredients

  • 2 tablespoons olive oil
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 cup diced onion
  • Salt and pepper (to taste)
  • 3 tablespoons all-purpose flour
  • 4 cups water
  • 4 teaspoons chicken base
  • 3 cups fresh broccoli florets
  • 3 cups fresh cauliflower florets
  • 1 cup half and half
  • 2 cups shredded sharp cheddar cheese

Instructions

  1. Sauté the vegetables: In a large pot, heat olive oil over medium heat. Add carrots, celery, and onions. Season with salt and pepper. Sauté until softened, about 5 minutes.
  2. Add the flour: Stir in all-purpose flour and cook for another minute, stirring frequently.
  3. Combine water and chicken base in a bowl and pour into the pot along with broccoli and cauliflower.
  4. Simmer the soup: Bring to a boil, then reduce to a simmer. Cover and simmer until vegetables are tender, about 10 minutes.
  5. Mash the vegetables: Turn off the heat and mash vegetables to desired consistency.
  6. Finish with cream and cheese: Stir in half and half and cheddar cheese, mixing until melted and creamy. Adjust seasoning as needed.

Notes

For a thicker soup, add more flour; for a thinner soup, add extra water or half and half. Taste often to adjust seasonings.
