A comforting creamy soup made with fresh broccoli, sharp cheddar cheese, and a hint of cream. Perfect for quick weeknight meals or impressing guests.

Ingredients

  • 1 tablespoon butter
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups broccoli florets
  • 3 cups vegetable or chicken broth
  • 1 cup heavy cream
  • 2 cups sharp cheddar cheese, shredded
  • Salt and pepper, to taste

Instructions

  1. Sauté the aromatics: In a large pot, melt the butter over medium heat. Add the chopped onion and sauté for about 5 minutes until softened. Stir in the minced garlic and cook for another minute, until fragrant.
  2. Cook the broccoli: Add the broccoli florets and broth to the pot. Bring the mixture to a boil, then reduce the heat to a simmer. Cover and let it cook for about 10-12 minutes, or until the broccoli is tender.
  3. Blend the soup: Using an immersion blender, carefully blend the soup until smooth. If you don’t have an immersion blender, transfer the mixture in batches to a regular blender. Ensure you let it cool slightly to avoid splattering.
  4. Add cream and cheese: Stir in the heavy cream and shredded cheddar cheese. Cook over low heat until the cheese is melted and the soup is heated through, about 3 to 5 minutes. Season with salt and pepper to taste.
  5. Serve and enjoy: Ladle the soup into bowls and serve immediately. You can garnish with extra cheese or a sprinkle of black pepper, if desired.

Notes

For extra flavor, consider adding red pepper flakes, lemon juice, or a dash of Worcestershire sauce. Adjust the consistency with additional broth or water as needed.
