Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup rice (uncooked)
  • 3 cups chicken broth
  • 1 cup broccoli florets
  • 1 cup shredded cheddar cheese
  • 1/2 cup cream or milk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Optional: breadcrumbs for topping

Instructions

  1. Preheat your oven to 350°F (175°C) to get it ready for baking.
  2. Heat the olive oil over medium heat and add the shredded chicken, sautéing for a few minutes until heated through.
  3. Stir in the uncooked rice, chicken broth, broccoli florets, garlic powder, onion powder, salt, and pepper. Bring the mixture to a gentle simmer.
  4. Add the cheddar cheese and cream, mixing until well combined and the cheese melts.
  5. Pour the mixture into a casserole dish and sprinkle with breadcrumbs if desired.
  6. Bake for 25-30 minutes, or until the top is bubbly and golden.
  7. Let the casserole cool slightly before serving. Enjoy!

Notes

You can use rotisserie chicken for a quicker option. Substitute brown rice for a nuttier flavor, adjusting cooking time accordingly. Broccoli can be replaced with spinach or peas for a different twist.
