Chicken Fajita Casserole

A hearty casserole that combines the vibrant flavors of chicken fajitas with the comforting goodness of a one-dish meal, easy to prepare and perfect for family dining.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 bell pepper, sliced (any color)
  • 1 onion, sliced
  • 1 can diced tomatoes with green chilies
  • 1 cup corn (canned or frozen)
  • 2 cups cooked rice (white or brown)
  • 1 tablespoon fajita seasoning
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat a splash of olive oil in a large skillet over medium heat. Add the sliced bell pepper and onion. Sauté until softened, about 5 minutes.
  3. Stir in the shredded chicken, diced tomatoes, corn, fajita seasoning, salt, and pepper. Mix well to combine all the flavors.
  4. Grease a baking dish and layer the cooked rice on the bottom. Pour the chicken mixture evenly over the rice.
  5. Sprinkle the shredded cheese evenly on top of the chicken mixture.
  6. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
  7. Let the casserole cool for a few minutes before serving.

Notes

Feel free to substitute the chicken with cooked turkey or tofu. This dish is also great with added black beans for extra fiber.
