A comforting and easy-to-make soup combining tender tortellini, shredded chicken, and fresh spinach in a creamy broth, ready in under 30 minutes.

Ingredients

  • 2 cups chicken broth (low-sodium)
  • 1 cup heavy cream
  • 1 cup cooked chicken, shredded
  • 1 package (9 oz) cheese tortellini (fresh or frozen)
  • 1 cup spinach, chopped
  • 1 carrot, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. Sauté the vegetables: In a large pot, heat 1-2 tablespoons of olive oil over medium heat. Add the chopped onion, diced carrot, and minced garlic. Sauté until the onion becomes translucent and the carrots are slightly softened, about 5 minutes.
  2. Add the broth: Pour in the chicken broth and bring it to a gentle simmer.
  3. Cook the tortellini: Stir in the cheese tortellini. Allow it to cook until they float to the top, usually about 3-4 minutes if using fresh tortellini or 5-6 minutes for frozen.
  4. Incorporate chicken and cream: Once the tortellini is cooked, add the shredded chicken and heavy cream. Stir until well combined and heated through.
  5. Add spinach: Gradually mix in the chopped spinach, seasoning with salt and pepper to taste. Cook until the spinach is wilted, about 2 minutes.
