Ingredients

  • 4 chicken thighs
  • 4 chicken drumsticks
  • 2 cups golden potatoes, quartered
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1 tablespoon olive oil
  • 1 tablespoon dried oregano
  • 1 teaspoon red pepper flakes
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat the olive oil in a large oven-safe skillet over medium heat.
  3. Season the chicken thighs and drumsticks with salt, pepper, oregano, and red pepper flakes.
  4. Sear the chicken in the skillet until browned, about 5-7 minutes per side.
  5. Set the browned chicken aside on a plate.
  6. Cook the minced garlic in the skillet until fragrant, about 30 seconds.
  7. Simmer the quartered potatoes and chicken broth in the skillet, bringing to a gentle simmer.
  8. Return the chicken to the skillet, placing it on top of the potatoes.
  9. Bake covered for 30-35 minutes.
  10. Crisp the chicken by removing the cover and baking for an additional 10 minutes.
  11. Garnish with fresh parsley and serve hot.
