Chicken with Pumpkin and Mushrooms

A delightful and hearty dish combining juicy chicken, earthy mushrooms, and sweet pumpkin for a comforting meal.

Ingredients

  • 2 large boneless skinless chicken breast halves
  • Salt and freshly ground black pepper
  • 1 tablespoon fresh thyme or ½ teaspoon dried thyme
  • 2 tablespoons olive oil, divided
  • 3 tablespoons flour, divided
  • 4 cups mushrooms, sliced or quartered
  • 1 small onion, chopped
  • 3 tablespoons butter, divided
  • 2 cups cubed pumpkin
  • 2½ cups vegetable or chicken broth
  • ½ cup cream
  • 1 tablespoon chopped parsley
  • For serving: mashed potatoes

Instructions

  1. Prepare the chicken: Cut each chicken breast into 2 thinner halves. Season with salt, pepper, and thyme. Place in a ziplock bag, drizzle with 1 tablespoon of olive oil, and coat with 2 tablespoons of flour. Set aside.
  2. Brown the chicken: Melt 1 tablespoon of butter in a large Dutch oven over medium-high heat. Add the chicken and cook for about 2 minutes on each side until browned. Remove the chicken and set it on a plate.
  3. Cook the vegetables: In the same pot, pour in the remaining tablespoon of olive oil. Add the mushrooms and onion, cooking until nicely browned. Remove the vegetables to a bowl.
  4. Sauté the pumpkin: Lower the heat slightly and add 1 tablespoon of butter to the pot. Add the cubed pumpkin and sauté for about 2–3 minutes until it begins to soften.
  5. Combine ingredients: Return the browned chicken to the pot. Pour in the broth and cover. Simmer until the pumpkin is tender, about 15 minutes.
  6. Make the cream sauce: In a small bowl, mix a few tablespoons of the broth with the cream. Pour this mixture into the pot with the chicken, adding the cooked mushrooms and onions as well. Stir gently to combine.
  7. Thicken the sauce: Cook uncovered for about 5 minutes, allowing the sauce to thicken slightly. Sprinkle with chopped parsley before serving.

Notes

Don’t overcrowd the pan for even cooking and seasoning is key to maximum flavor.
