A delightful soup featuring flavorful broth and tender wontons filled with ground chicken and spices, perfect for chilly days.

Ingredients

  • 1 lb ground chicken
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon grated fresh ginger
  • 2 garlic cloves, minced
  • 2 green onions, finely chopped
  • 1 tablespoon cornstarch
  • 1 teaspoon rice vinegar
  • ½ teaspoon white pepper
  • 30-40 square wonton wrappers
  • 6 cups chicken broth
  • 1 tablespoon soy sauce
  • 1 tablespoon Shaoxing wine or dry sherry
  • 1 teaspoon sesame oil
  • 1 thumb-sized piece of ginger, sliced
  • 2 garlic cloves, smashed
  • 2 scallions, cut into thirds
  • A few drops of chili oil (optional)
  • Salt (to taste)
  • Thinly sliced scallions (for garnishing)
  • Fresh cilantro leaves (for garnishing)
  • Chili crisp or chili oil (optional)
  • A squeeze of lime (for brightness)

Instructions

  1. Prepare the Chicken Filling: In a mixing bowl, combine ground chicken, soy sauce, oyster sauce, sesame oil, grated ginger, minced garlic, chopped green onions, cornstarch, rice vinegar, and white pepper. Mix until well combined.
  2. Fill the Wontons: Lay a wonton wrapper on a clean surface. Place a teaspoon of the chicken filling in the center. Moisten the edges with water, fold the wrapper over to form a triangle, and seal securely. Make sure there are no air pockets. Repeat until all filling is used.
  3. Simmer the Broth: In a large pot, combine chicken broth, soy sauce, Shaoxing wine, sesame oil, sliced ginger, smashed garlic, and chopped scallions. Bring to a boil, then reduce the heat and let it simmer for about 10 minutes to infuse the flavors. Season with salt to taste.
  4. Cook the Wontons: Carefully add the filled wontons to the simmering broth. Cook for about 5-8 minutes or until they float to the surface and are cooked through. Avoid overcrowding the pot; you can cook them in batches if necessary.
  5. Assemble and Serve: Remove the pot from heat. Ladle the soup and wontons into bowls. Garnish with sliced scallions, fresh cilantro, chili crisp or oil, and a squeeze of lime for brightness. Serve warm.

Notes

For a vegetarian option, replace ground chicken with finely chopped mushrooms and tofu. Use gluten-free wonton wrappers to make this dish gluten-free.
