1 medium onion, diced
2 cloves garlic, minced
2 medium carrots, diced
2 celery stalks, diced
1 teaspoon Italian seasoning
4 cups chicken broth
1 pound cooked chicken, shredded
1 (16-ounce) package of gnocchi
1 cup heavy cream
2 cups fresh spinach

Instructions
Sauté the vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery. Cook for about 5-7 minutes until the vegetables soften.
Add garlic and spices: Stir in the minced garlic and Italian seasoning. Cook for an additional minute until fragrant.
Pour in chicken broth: Add the chicken broth to the pot, bringing the mixture to a gentle boil.
Add chicken and gnocchi: Stir in the shredded chicken and gnocchi. Cook according to the gnocchi package instructions, usually about 3-5 minutes, until they’re tender and floating.
