Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 cup wild rice
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Prepare the Chicken: Place the boneless, skinless chicken breasts at the bottom of the slow cooker.
  2. Add the Vegetables: Layer in the chopped onion, diced carrots, diced celery, and wild rice.
  3. Pour in the Broth: Add the chicken broth and sprinkle in the dried thyme.
  4. Season It Up: Season with salt and pepper according to your taste preferences.
  5. Cook Low and Slow: Cover the slow cooker and cook on low for 6 to 8 hours. The chicken should be cooked through, and the rice should be tender.
  6. Shred the Chicken: After cooking, remove the chicken breasts, shred them with two forks, and return the shredded chicken to the slow cooker.
  7. Add the Cream: Stir in the heavy cream and let it cook for an additional 30 minutes for a creamy consistency.
