A quick and flavorful noodle dish with garlic and chili oil, perfect for busy weeknights or a comforting weekend treat.

Ingredients

  • 2 servings any noodles (use rice noodles for a gluten-free option)
  • 4 tablespoons minced garlic
  • 2 tablespoons chili oil
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sugar
  • 1/4 cup sesame oil
  • 1 pinch salt
  • 2 tablespoons chopped scallions
  • 1 tablespoon sesame seeds

Instructions

  1. Bring a large pot of salted water to a boil. Add the noodles and cook according to package instructions until al dente. Drain and set aside.
  2. In a large skillet over medium heat, combine the minced garlic and chili oil. Sauté for about 1-2 minutes or until the garlic is fragrant and lightly golden. Be careful not to burn the garlic.
  3. Add the cooked noodles to the skillet along with soy sauce, rice vinegar, and sugar. Toss everything together, ensuring the noodles are well coated in the sauce. Cook for an additional 2-3 minutes to heat through and blend the flavors.
  4. Drizzle in the toasted sesame oil and toss again. Taste and adjust seasoning, adding a pinch of salt if needed.
  5. Transfer the noodles to bowls. Sprinkle with chopped scallions and sesame seeds for added crunch and color. Serve warm.

Notes

Use fresh garlic for the best flavor. Adjust spice levels to your preference and don’t overcook the noodles.
