A refreshing blend of chicken, cranberries, and pecans in a creamy poppy seed dressing, perfect for lunch or light dinner.

Ingredients

  • 2 cups cooked chicken, shredded or diced
  • 1 cup fresh cranberries (or dried cranberries for added sweetness)
  • 1/2 cup pecans, chopped
  • 1/2 cup celery, diced
  • 1/4 cup red onion, diced
  • 1/2 cup mayonnaise
  • 1/4 cup plain yogurt
  • 2 tablespoons poppy seeds
  • 1 tablespoon honey
  • Salt and pepper to taste

Instructions

  1. Combine Salad Ingredients: In a large bowl, combine the cooked chicken, cranberries, pecans, celery, and red onion. Mix until well distributed.
  2. Prepare the Dressing: In a separate small bowl, whisk together the mayonnaise, yogurt, poppy seeds, honey, salt, and pepper until smooth.
  3. Mix and Toss: Pour the dressing over the chicken mixture and gently toss to combine, ensuring all ingredients are well coated.
  4. Serve: Serve immediately, or refrigerate for at least an hour to allow the flavors to meld together beautifully.

Notes

Chill the salad for at least an hour for best flavor; can substitute Greek yogurt for sour cream.
