A comforting and delicious soup with tender chicken, hearty vegetables, and a rich, creamy broth, perfect for chilly days.

Ingredients

  • 2 cups cooked chicken, shredded
  • 8 cups chicken broth
  • 1 cup carrots, sliced
  • 1 cup celery, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups egg noodles
  • 1 cup heavy cream
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat a little oil over medium heat. Add the chopped onion, minced garlic, sliced carrots, and celery. Sauté until the vegetables are tender, about 5-7 minutes.
  2. Pour in the chicken broth and bring to a boil. Stir occasionally to ensure the flavors meld together.
  3. Once the broth is boiling, add the egg noodles. Cook them according to the package instructions until they are al dente, typically around 7-8 minutes.
  4. After the noodles are cooked, add the shredded chicken, thyme, salt, and pepper to the pot. Stir well to combine all the ingredients.
  5. Reduce the heat to low and gently stir in the heavy cream. Let the soup simmer for a few more minutes to thicken slightly.
  6. Taste and adjust seasoning if necessary. Ladle the soup into bowls and serve hot.

Notes

You can substitute the egg noodles with whole grain or gluten-free pasta if desired.
