Ingredients

  • 1 lb chicken breast, cubed
  • 1 cup carrots, sliced
  • 1 cup celery, sliced
  • 1 medium onion, chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons flour
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Biscuits or dumplings for serving

Instructions

  1. Sauté the vegetables: In a large pot, heat the olive oil over medium heat. Add the chopped onions, sliced carrots, and celery. Sauté for about 5 minutes, until the vegetables are softened and the onions are translucent.

Notes

Use skinless chicken breasts for a leaner option. If you’re short on time, pre-chopped vegetables can also work well. Make sure to sauté the vegetables until they are tender but not fully cooked; they will continue to cook while simmering.
