A deliciously rich dish featuring tender chicken fillets simmered in a creamy, tangy sauce infused with garlic and sun-dried tomatoes, perfect for cozy dinners or special occasions.

Ingredients

  • 2 chicken fillets (large)
  • 3.5 ounces pancetta (diced)
  • 1 red bell pepper (cut into thin slices)
  • 1 onion (finely chopped)
  • 6 garlic cloves (minced)
  • 2 ounces sun-dried tomatoes (drained)
  • ½ cup low sodium chicken broth
  • ½ cup white wine (preferably Pinot Grigio)
  • ¾ cup cream (20% fat)
  • 2 tbsp tomato paste
  • 1 ounce grated Parmesan
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tbsp freshly chopped parsley
  • ½ tsp crushed red pepper flakes (for serving)
  • 1 tbsp olive oil
  • 1 tbsp unsalted butter

Instructions

  1. Heat olive oil in a large non-stick skillet set over medium-low heat. Add the diced pancetta and cook until crispy and golden brown, about 3 minutes. Remove it from the skillet, leaving as much grease as possible.
  2. Season the chicken fillets with salt, black pepper, and smoked paprika. Melt the butter in the same skillet, then add the chicken. Cook over medium-high heat for about 8-10 minutes on each side, or until fully cooked and browned. Remove from the skillet and cover with foil.
  3. Lower the heat and add the minced garlic and chopped onion to the skillet. Sauté until soft and fragrant, about 1 minute.
  4. Pour in the white wine, using a wooden spoon to scrape the browned bits from the skillet. Let it simmer for 1-2 minutes.
  5. Stir in the sliced red bell pepper and continue to sauté for about 5 minutes. Then add the sun-dried tomatoes, oregano, and thyme, cooking for another 5 minutes.
  6. Pour in the chicken broth and add the tomato paste. Stir to combine and bring the mixture to a boil.
  7. Add the cream and grated Parmesan, mixing until well combined. Return the chicken to the skillet and let it simmer for 3-5 minutes, or until heated through. Taste and adjust salt and black pepper as needed.
  8. Finish off the dish by topping with reserved pancetta and freshly chopped parsley. Sprinkle with crushed red pepper flakes before serving.
