Ingredients
1 tablespoon olive oil
1 pound boneless, skinless chicken thighs
1 medium onion, diced
2 carrots, diced
2 celery stalks, diced
4 cups chicken broth
1 cup heavy cream
1 teaspoon garlic powder
½ teaspoon dried thyme
Salt and pepper, to taste
2 cups all-purpose flour
1 tablespoon baking powder
½ teaspoon salt
1 cup milk
¼ cup butter, melted
Instructions
Sauté the chicken by heating olive oil in a large pot over medium heat. Cook chicken thighs for 5-7 minutes until browned, then remove and set aside.
Cook the aromatics by adding diced onion, carrots, and celery to the same pot. Sauté for about 5 minutes until softened.
Create the broth by returning the chicken to the pot, pouring in chicken broth, and stirring in heavy cream, garlic powder, thyme, salt, and pepper. Bring to a gentle simmer.
Prepare the dumplings by combining flour, baking powder, and salt in a bowl, then mixing in milk and melted butter until just combined.
Cook the dumplings by dropping spoonfuls of batter onto the simmering broth, covering, and steaming for about 15 minutes until fluffy.
Serve and enjoy by stirring the pot gently and garnishing with fresh herbs if desired.
Notes
Avoid overmixing the dumpling batter for fluffiness. Taste and adjust seasoning before serving.
