A delightful dish combining Italian seasoned ground chicken, creamy ricotta, and zesty lemon, perfect for quick weeknight dinners.

Ingredients

  • 1 pound Italian seasoned ground chicken
  • 3 cloves garlic, minced
  • 1 tablespoon Calabrian chiles, minced
  • 12 ounces pasta (e.g., fettuccine or penne)
  • 1 cup peas (frozen or fresh)
  • 1 cup ricotta cheese
  • 1 lemon (juiced and zested)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Grated Parmesan cheese (for serving)

Instructions

  1. Cook the Pasta: Boil a large pot of salted water and cook the pasta according to package instructions until al dente. Drain and set aside.
  2. Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and Calabrian chiles, sautéing for about 1 minute until fragrant.
  3. Brown the Chicken: Add the ground chicken to the skillet, breaking it up with a spatula. Cook until browned and cooked through, about 7-10 minutes. Make sure there are no pink bits left.
  4. Add the Peas: Stir in the peas and cook for an additional 2-3 minutes until heated through.
  5. Prepare the Ricotta Mixture: In a separate bowl, mix the ricotta cheese, lemon juice, and lemon zest until well combined.
  6. Combine Everything: Add the cooked pasta to the skillet with the chicken and peas. Stir in the ricotta mixture and combine until everything is evenly coated.
  7. Season: Taste and season with salt and pepper as needed.
  8. Serve and Enjoy: Serve hot, topped with grated Parmesan cheese.

Notes

Don’t overcook the pasta; aim for al dente. Adjust spice levels according to your preference, and use fresh ingredients for best results.
