Ingredients

  • 1 cup orzo pasta
  • 2 cups cooked chicken, shredded
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 lemon, juiced and zested
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Sauté the vegetables: In a large pot, heat a tablespoon of olive oil over medium heat. Add the chopped onion, diced carrots, and celery. Sauté for about 5 minutes until the vegetables soften.
  2. Add garlic: Stir in the minced garlic and cook for an additional minute until fragrant, being careful not to let it brown.
  3. Simmer the broth: Pour in the chicken broth and bring to a simmer. This will create the flavorful base for your soup.
  4. Cook the orzo: Add the orzo pasta to the pot and cook according to package instructions, usually around 8-10 minutes, or until al dente.
  5. Incorporate chicken and cream: Once the orzo is cooked, stir in the shredded chicken, heavy cream, lemon juice, and lemon zest. Mix well to combine all the flavors.
  6. Season and serve: Season with salt and pepper to taste. Allow the soup to simmer for a few more minutes to heat through. Serve hot, garnished with fresh parsley.

Notes

You can substitute rotisserie chicken for the cooked chicken to save time. For a lighter version, consider using half-and-half instead of heavy cream.
