1.5 Pounds Chicken Breasts, cut into 1-inch pieces
4 Tablespoons Butter
1/2 Cup Heavy Cream
1/2 Cup Freshly Grated Parmesan Cheese
1 Large Onion, diced
3 Cloves Garlic, minced (about 3 teaspoons)
1 Cup Long Grain White Rice
2 Teaspoons Italian Seasoning
1/2 Teaspoon Pepper
1 Teaspoon Salt
2 1/2 Cups Chicken Broth

Instructions
Heat the butter in a large skillet over medium-high heat. Once melted, add the diced onion and cook for about 2-3 minutes until it begins to soften.
Add the diced chicken to the pan along with the Italian seasoning, pepper, and salt. Stir to coat the chicken in the spices and cook for approximately 5 minutes until it’s golden on all sides.
Add the minced garlic to the pan and cook for an additional minute, stirring constantly to avoid burning the garlic.
Pour in the chicken broth and add the rice. Stir everything together, ensuring the rice is evenly distributed.
Bring the mixture to a boil, then reduce the heat to medium-low. Cover the skillet with a lid and let it simmer for 17-20 minutes or until the rice is tender and has absorbed the liquid.
Stir in the heavy cream and Parmesan cheese until well combined. Cook for another minute or so until heated through. Serve immediately, topped with chopped parsley if desired.
