Ingredients
2 chicken breasts (boneless, skinless)
1 cup chicken broth
1 cup orzo pasta
1 cup heavy cream
1 cup spinach
1 cup sun-dried tomatoes
3 cloves garlic, minced
1 teaspoon Italian seasoning
Salt and pepper to taste
Parmesan cheese for serving (optional)
Instructions
Combine the chicken breasts, minced garlic, sun-dried tomatoes, Italian seasoning, chicken broth, and a sprinkle of salt and pepper in your slow cooker. Stir well to combine.
Cover your slow cooker with the lid and set it to cook on low for 4 to 6 hours. Check for doneness; the chicken should be tender enough to shred.
Remove the chicken from the slow cooker and shred it using two forks. Return the shredded chicken back into the slow cooker, stirring it into the sauce.
Stir in the orzo pasta, heavy cream, and spinach. Ensure everything is well-mixed.
Cover and cook on low for an additional 30 minutes, or until the orzo is tender.
Serve hot, garnished with freshly grated Parmesan cheese on top.
