Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup coconut milk
  • 1 cup tomato puree
  • 1/2 cup unsalted butter
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 tablespoon garam masala
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Prepare the Base: In a crockpot, combine the diced onion, minced garlic, minced ginger, coconut milk, tomato puree, unsalted butter, and spices. Stir them gently until well mixed.

Coconut milk adds creaminess. For a richer sauce, use full-fat coconut milk or light for a lighter version. A key spice blend is garam masala; if unavailable, substitute with a mix of cumin, coriander, and cardamom.
