Crockpot Chicken and Stuffing

A comforting one-pot meal featuring tender chicken and savory stuffing, perfect for busy weeknights.

Ingredients

  • 4 boneless skinless chicken breasts
  • 1 box (6 oz) stuffing mix
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup chicken broth
  • 1/2 cup sour cream
  • Salt and pepper, to taste

Instructions

  1. Place the four boneless skinless chicken breasts in the bottom of your crockpot in a single layer. Lightly season with salt and pepper.
  2. Whisk together the cream of chicken soup, sour cream, and chicken broth until smooth and well combined.
  3. Pour the cream sauce mixture evenly over the chicken breasts.
  4. Sprinkle the dry stuffing mix evenly over the top. Do not stir or press it down.
  5. Cover the crockpot and cook on LOW for 7 to 8 hours or on HIGH for 4 to 5 hours.
  6. Shred the chicken with two forks for serving, fluffing the stuffing layer on top.

Notes

For a different flavor, substitute cream of chicken soup with cream of mushroom soup. Use Greek yogurt for a lighter option instead of sour cream.
