A delightful and easy meal featuring tender chicken, colorful vegetables, and flavorful noodles, all cooked to perfection in a slow cooker.

Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 cup chicken broth
  • 1/4 cup soy sauce
  • 2 tablespoons oyster sauce
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 8 ounces Lo Mein noodles
  • 2 cups mixed veggies (bell peppers, carrots, broccoli)
  • 1 tablespoon cornstarch
  • Salt and pepper to taste
  • Green onions for garnish

Instructions

  1. Combine the Base: In a slow cooker, add the chicken breasts, chicken broth, soy sauce, oyster sauce, garlic, and ginger. Stir to combine everything well.
  2. Cook Low and Slow: Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender and cooked through.
  3. Prepare the Noodles: About 30 minutes before serving, cook the Lo Mein noodles according to package instructions until al dente.
  4. Shred the Chicken: Once the chicken is ready, remove it from the slow cooker and shred it using forks. Return the shredded chicken to the pot.
  5. Add Noodles and Veggies: Stir in the cooked noodles and mixed veggies. Toss everything together until combined.
  6. Thicken the Sauce: If desired, mix cornstarch with a little water to create a slurry, then stir it into the sauce to thicken. Season with salt and pepper to taste.
  7. Serve and Garnish: Serve hot, garnishing each bowl with chopped green onions for added freshness.
