A comforting and hearty dish that brings the classic flavors of lasagna into a cozy bowl of soup, perfect for busy weeknights.

Ingredients

  • 1 pound ground beef (or Italian sausage)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can (15 oz) diced tomatoes
  • 4 cups chicken or vegetable broth
  • 2 cups uncooked lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Instructions

  1. Brown the meat: In a large pot, cook the ground beef (or sausage) over medium heat until browned, about 5-7 minutes. Drain excess fat if necessary.
  2. Sauté the aromatics: Add the diced onion and bell pepper to the pot. Cook until softened, about 3-4 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.
  3. Add the base: Stir in the diced tomatoes, broth, and Italian seasoning. Season with salt and pepper to taste. Bring the mixture to a simmer.
  4. Cook the noodles: Add the broken lasagna noodles to the pot. Simmer for about 10-12 minutes, stirring occasionally, until the noodles are tender.
  5. Incorporate the cheeses: Remove the pot from heat. Stir in the ricotta and half of the mozzarella cheese until well combined and creamy.
  6. Finish with toppings: Serve the soup in bowls and top with the remaining mozzarella and Parmesan cheese. Optionally, garnish with fresh basil before serving.
