A comforting weeknight meal combining tender chicken, hearty rice, and vibrant vegetables in a savory broth.

Ingredients

  • 1 lb chicken breast, cubed
  • 1 cup rice (white or brown)
  • 2 cups chicken broth
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup mixed vegetables (peas, carrots, etc.)
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat the oil in a large skillet over medium heat.
  2. Sauté the diced onion and minced garlic until softened, about 2-3 minutes.
  3. Brown the cubed chicken until browned on all sides, about 5-7 minutes.
  4. Combine the rice and mixed vegetables, ensuring everything is well distributed.
  5. Add the chicken broth, then season with salt and pepper to taste.
  6. Bring the mixture to a boil, then reduce heat to low and cover the skillet.
  7. Cook until the rice is tender and the liquid is absorbed, about 20-25 minutes.
