Ingredients

  • 4 chicken thighs
  • 2 cups baby potatoes
  • 4 tablespoons garlic butter
  • 1 tablespoon olive oil
  • 1 teaspoon dried herbs (such as thyme or rosemary)
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the baby potatoes with olive oil, garlic butter, dried herbs, salt, and pepper until well-coated.
  3. Place the chicken thighs on a baking sheet and season them generously with salt and pepper.
  4. Scatter the seasoned potatoes around the chicken thighs on the baking sheet.
  5. Bake in the preheated oven for 35-40 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C), and the potatoes are tender.
