A simple and versatile royal icing recipe perfect for decorating cookies, cupcakes, and cakes for any occasion.

Ingredients

  • 3 large egg whites or 3 tablespoons meringue powder
  • 4 cups powdered sugar (sifted)
  • 1 tablespoon lemon juice

Instructions

  1. Prepare your bowl: In a large mixing bowl, beat the egg whites or meringue powder until frothy. Use a hand mixer or stand mixer on medium speed.
  2. Add powdered sugar: Gradually add the sifted powdered sugar while mixing. Continue to beat until it forms stiff peaks (about 7-10 minutes).
  3. Add lemon juice: Gently fold in the lemon juice to add flavor and adjust consistency.
  4. Adjust consistency: Check the icing consistency; it should be thick but pipeable. Add a tiny bit of water if needed.
  5. Color the icing: If desired, separate into bowls and add food coloring, mixing to the desired shade.
  6. Use or store: Use immediately or store in an airtight container to prevent drying out.
