A comforting and easy recipe for chicken and dumplings made in a slow cooker, perfect for busy weeknights.

Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 2 cups chicken broth
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 onion, diced
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 can (8 ounces) refrigerated biscuit dough

Instructions

  1. Prepare the chicken: Place the boneless, skinless chicken breasts in the bottom of the slow cooker. Season with dried thyme, garlic powder, salt, and pepper.
  2. Add broth and veggies: Pour in the chicken broth. Add the diced carrots, diced celery, and diced onion, ensuring they are evenly distributed around the chicken.
  3. Cook the chicken: Cover the slow cooker and cook on low for 6-8 hours, or until the chicken is thoroughly cooked and tender.
  4. Add dumplings: About 30 minutes before serving, open the can of biscuit dough. Cut each biscuit into quarters and add them to the slow cooker. Make sure they are nestled in the broth.
  5. Finish cooking: Cover again and cook for an additional 30 minutes, or until the dumplings are cooked through and puffed up.
  6. Shred and serve: Shred the chicken with two forks and stir everything to combine. Serve warm for a delightful meal.
