Garlic Butter Chicken and Potatoes

A comforting and hearty dish combining chicken breasts and potatoes cooked in rich garlic butter, perfect for family dinners.

Ingredients

  • 4 chicken breasts
  • 4 medium potatoes, diced
  • 4 tablespoons butter
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Melt the butter in a skillet over medium heat. Add the minced garlic and sauté for about 1-2 minutes or until fragrant.
  3. Season the chicken breasts with salt, pepper, thyme, and paprika on both sides.
  4. Sear the seasoned chicken breasts in the skillet with the garlic butter for 3-4 minutes on each side, or until golden brown.
  5. Prepare the diced potatoes in a baking dish. Season with additional salt and pepper, then pour the remaining garlic butter mixture over the potatoes and toss to coat.
  6. Combine the seared chicken breasts on top of the potatoes in the baking dish. Bake for 25-30 minutes or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  7. Garnish with fresh parsley before serving.

Notes

For a richer taste, consider using unsalted butter. You can customize the dish with different herbs or spices to suit your preferences.
