Ingredients
2 tablespoons Olive Oil
6 cloves Garlic, minced
1 medium Onion, diced
2 large Carrots, sliced
2 stalks Celery, diced
1 pound Chicken Breast, chopped
6 cups Chicken Broth
2 cups Egg Noodles
1/4 cup Parsley, chopped
Salt and Pepper, to taste
Instructions
Sauté the Aromatics: In a large pot, heat olive oil over medium heat. Add minced garlic, onion, carrots, and celery. Sauté for 5-7 minutes until the vegetables are soft and fragrant.
Cook the Chicken: Add the chopped chicken breast to the pot. Cook for about 6-8 minutes, stirring occasionally, until the chicken is no longer pink.
Add Broth: Pour in the chicken broth, bring the mixture to a gentle boil.
Cook the Noodles: Once boiling, add the egg noodles to the pot. Cook according to the package instructions, usually around 8-10 minutes, until the noodles are tender.
Season: Taste the soup and season with salt and pepper as needed. Remove from heat.
Serve: Ladle the soup into bowls and garnish with fresh parsley before serving.
Notes
Use fresh garlic and herbs for the best flavor. Avoid overcooking the noodles to maintain the right texture.
