A delightful and versatile recipe for stuffed bell peppers filled with ground meat, rice, and spices, perfect for any family dinner.

Ingredients

  • 4 large bell peppers (any color)
  • 1 pound ground beef or turkey
  • 1 cup cooked rice
  • 1 can diced tomatoes (14.5 ounces)
  • 1 small onion (finely chopped)
  • 2 cloves garlic (minced)
  • 1 tablespoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional, for topping)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Prepare the bell peppers by cutting the tops off and removing the seeds.
  3. Heat a drizzle of oil in a skillet over medium heat, then add the chopped onion and garlic, sautéing until softened.
  4. Add the ground meat to the skillet and cook until browned, draining any excess fat.
  5. Stir in the cooked rice, diced tomatoes, Italian seasoning, salt, and pepper, letting it simmer for 5 minutes.
  6. Stuff each pepper with the meat and rice mixture, pressing down gently to pack it.
  7. Cover the baking dish with foil and bake for 30 minutes.
  8. If using cheese, remove foil, sprinkle on top, and bake for an additional 10 minutes.
  9. Allow to cool slightly before serving.

Notes

For a vegetarian option, swap the meat for black beans or lentils. You can add different spices for added flavor.
