Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract (optional)
  • 2 cups powdered sugar (for icing)
  • 2 egg whites (or 1 tablespoon meringue powder mixed with water)
  • Food coloring (orange, black, and white)
  • Edible eyes

Instructions

  1. Prepare the dough: In a mixing bowl, whisk together the flour, sugar, baking powder, and salt. In another bowl, beat the eggs with vanilla and almond extracts. Gradually mix the wet ingredients into the dry ingredients until a dough forms.
  2. Shape the biscotti: Preheat your oven to 350°F (175°C). On a floured surface, divide the dough into two sections. Shape each into a log about 12 inches long and 2 inches wide. Place logs on a lined baking sheet.
  3. Bake the biscotti logs: Bake in the preheated oven for 25-30 minutes, until lightly golden and firm. Remove and let cool for about 10 minutes.
  4. Slice and bake again: Reduce oven temperature to 325°F (160°C). Carefully slice the logs diagonally into 1-inch wide pieces and bake for another 15-20 minutes until dry and crispy. Let cool completely.
  5. Make the royal icing: Whip egg whites (or meringue powder mixture) until soft peaks form. Gradually add powdered sugar and continue to whip until smooth and glossy. Color with food coloring.
  6. Decorate the biscotti: Spread royal icing on cooled biscotti with a piping bag or spatula, decorate with edible eyes, and let set completely before serving.
