A creamy and comforting Chicken Alfredo Pasta dish that combines tender chicken and fettuccine in a rich Alfredo sauce. Perfect for weeknight dinners.

Ingredients

  • 8 oz fettuccine or your favorite pasta
  • 2 boneless, skinless chicken breasts, diced
  • 2 tablespoons olive oil for cooking chicken
  • 2 cloves garlic, minced
  • 1 cup heavy cream for the sauce
  • 1 cup Parmesan cheese, grated, plus extra for serving
  • Salt and pepper to taste
  • Chopped parsley for garnish (optional)

Instructions

  1. Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Drain and set aside, reserving a little pasta water.
  2. Cook the Chicken: While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the diced chicken breasts, seasoning with salt and pepper. Cook for about 5-7 minutes, stirring occasionally, until browned and cooked through.
  3. Add Garlic: Stir in minced garlic and cook for an additional minute until fragrant.
  4. Prepare the Alfredo Sauce: Pour in the heavy cream, bringing it to a gentle simmer. Stir continuously to blend flavors.
  5. Add Cheese: Gradually add the grated Parmesan cheese, stirring until melted and sauce thickens. If too thick, add a splash of reserved pasta water.
  6. Combine Pasta and Sauce: Add the cooked pasta to the skillet, tossing it with the sauce until evenly coated. Cook for another 1-2 minutes to warm through.
  7. Serve: Remove from heat, adjust seasoning if necessary, and serve immediately. Garnish with freshly chopped parsley and additional Parmesan cheese, if desired.
