A comforting and satisfying broccoli cheddar soup that combines creamy texture with wholesome vegetables, perfect for chilly days.

Ingredients

  • 2 cups broccoli florets
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup milk (or a non-dairy alternative)
  • 2 tablespoons flour
  • 2 tablespoons olive oil
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste

Instructions

  1. Sauté onions and garlic: In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, cooking until the onion is soft and translucent, about 3 to 5 minutes.
  2. Add broccoli and broth: Add the broccoli florets and vegetable broth to the pot. Bring the mixture to a boil, then reduce the heat and let it simmer until the broccoli is tender, approximately 10 to 15 minutes.
  3. Prepare thickening mixture: In a separate bowl, whisk together the flour and milk until smooth.
  4. Incorporate thickening mixture: Gradually pour the flour and milk mixture into the pot, stirring continuously to avoid lumps. Cook for an additional 5 minutes until the soup thickens.
  5. Add cheese: Remove the pot from heat and stir in the shredded cheddar cheese until melted and well combined.
  6. Season and serve: Season the soup with salt and pepper to taste. Ladle the soup into bowls and serve warm.
