A warm and comforting soup blending tender chicken, hearty wild rice, and vibrant vegetables in a rich, savory broth.

Ingredients

  • 1 lb chicken breast, diced
  • 1 cup wild rice
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 cup milk or unsweetened almond milk
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Combine ingredients in a slow cooker, Instant Pot, or a large pot on the stovetop: diced chicken, wild rice, chopped onion, sliced carrots, chopped celery, chicken broth, minced garlic, thyme, and rosemary.
  2. Cook – Slow Cooker: Cook on low for 6-8 hours or high for 3-4 hours. Instant Pot: Use the pressure cook function for 15 minutes. Stovetop: Bring to a boil, then reduce heat and simmer for about 30-40 minutes, until chicken is cooked through and wild rice has opened.
  3. Stir in milk or almond milk to add creaminess.
  4. Season to taste with salt and pepper, then stir to combine.
  5. Serve hot, garnished with fresh parsley. Enjoy with crusty bread or a light salad!

Notes

You can use leftover cooked chicken for a quicker option. To adjust consistency, add extra broth or water if the soup is too thick.
