Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 pound cooked, shredded chicken
  • 2 cans (15 oz each) white beans, drained and rinsed
  • 2 cups chicken broth
  • 1 can (4 oz) diced green chiles
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 cup heavy cream or sour cream (optional)
  • Chopped cilantro for garnish (optional)

Instructions

  1. Sauté the aromatics: In a large pot, heat olive oil over medium heat. Add the diced onion and sauté until softened, about 5 minutes. Stir in minced garlic and cook for another minute, until fragrant.
