A comforting chicken noodle soup made effortlessly in a crockpot, featuring tender chicken, fresh vegetables, and hearty egg noodles.

Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 6 cups chicken broth
  • 2 cups carrots, sliced
  • 1 cup celery, diced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 3 cups egg noodles
  • Parsley for garnish

Instructions

  1. Prepare the chicken: Place the chicken breasts in the crockpot.
  2. Add the broth and vegetables: Pour in the chicken broth, and add the carrots, celery, onion, garlic, thyme, salt, and pepper.
  3. Cook it: Cover and cook on low for 6-8 hours or high for 3-4 hours, until the chicken is cooked through and tender.
  4. Shred the chicken: Once done, carefully remove the chicken from the crockpot and shred it using two forks.
  5. Return chicken to crockpot: Add the shredded chicken back into the crockpot.
  6. Cook the noodles: Stir in the egg noodles and cook for an additional 30 minutes on high, until the noodles are tender.
  7. Serve and garnish: Serve hot, garnished with fresh parsley for a pop of color and flavor.

Notes

For best results, add noodles during the last half hour of cooking. Adjust seasoning according to taste before serving.
