Lasagna Soup is a comforting and hearty dish that captures the flavors of traditional lasagna in a warm, bowl-friendly form. Perfect for weeknight dinners and customizable to your preferences.

Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 4 cups beef broth
  • 8 oz lasagna noodles, broken into pieces
  • 2 cups ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup grated Parmesan cheese
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Brown the meat: In a large pot, brown the ground beef over medium heat, stirring occasionally. Add the chopped onion and minced garlic, cooking until the onion is translucent and the beef is fully cooked. Drain any excess fat.
  2. Add the tomatoes and broth: Pour in the crushed tomatoes and beef broth. Sprinkle in the dried oregano, dried basil, salt, and pepper. Stir to combine and bring the mixture to a boil.
  3. Cook the noodles: Once the soup is boiling, add the broken lasagna noodles. Reduce the heat to a simmer and cook until the noodles are tender, about 10 minutes. Stir occasionally to prevent sticking.
  4. Prepare the cheese mixture: While the noodles are cooking, in a separate bowl, combine the ricotta and grated Parmesan cheese. Mix until well blended.
  5. Serve the soup: Ladle the hot soup into bowls and top each serving with a generous scoop of the ricotta mixture and a sprinkle of shredded mozzarella. Garnish with fresh basil for extra flavor.

Notes

For the best flavor, don’t skip browning the meat. Adjust the thickness of the soup with extra broth if needed. Cook noodles al dente to prevent them from becoming mushy.
