Ingredients
2 cups cooked chicken (shredded or diced)
1 cup carrots (sliced)
1 cup celery (sliced)
1 cup onion (diced)
2 cloves garlic (minced)
4 cups low-sodium chicken broth
1 cup unsweetened almond milk or low-fat milk
2 cups egg noodles or whole grain noodles
1 teaspoon dried thyme
1 teaspoon rosemary
Salt and pepper to taste
2 tablespoons olive oil or butter
Fresh parsley for garnish (optional)
Instructions
Sauté the vegetables: In a large pot, heat the olive oil or butter over medium heat. Add the onions, carrots, and celery. Sauté for about 5–7 minutes until they begin to soften.
Add garlic and herbs: Stir in the minced garlic, thyme, and rosemary. Cook for an additional minute until fragrant.
Pour in the broth: Add the chicken broth to the pot, bringing it to a gentle simmer. Allow it to cook for about 5 minutes.
Incorporate the noodles: Add the egg noodles to the soup. Cook for 7–10 minutes, or until the noodles are tender but not overcooked.
Add chicken and milk: Stir in the cooked chicken and almond milk, allowing the mixture to heat through for another 2–3 minutes.
Season and serve: Season with salt and pepper to taste. Remove from heat and garnish with fresh parsley if desired. Serve hot and enjoy!
Notes
For a creamier soup, consider adding more almond milk or a dollop of Greek yogurt when serving.
